Recipe: Dijon Herb Broiled Salmon


What’s Amy Eating? Dijon Herb Broiled Salmon

1 package of Salmon (equals to 2 large filets which can be cut into 4-6 portions.

1 tbsp finely chopped fresh thyme leaves

1tbsp finely chopped fresh rosemary leaves

2 tbsp Traditional Dijon mustard

2 tbsp whole-grain mustard

1 tablespoon white wine (I used Chardonnay, the wine is optional)

1 tablespoon extra-virgin olive oil

3 cloves of garlic

juice from 1 lemon

salt to taste


Set your over to preheat on BROIL

Place your salmon filets skin side down on your baking sheet lined with aluminum foil.

Give your salmon a generous grinding of salt, place aside

In your food processor, combine thyme, rosemary, mustards, white wine, olive oil, garlic and lemon juice. Process until smooth

Place your salmon filets in the oven and broil for 3 minutes until a slightly deeper pink and moisture has formed on the tops

Remove from oven and cover completely with your dijon herb sauce

Return your salmon to the oven and cook for an additional 5 minutes or until golden brown and bubbling

Remove from oven, divide into portions of your choosing, and enjoy!
